Egg Salad in Tomato Cups

Servings 4

Ingredients
  

  • 4 medium tomatoes
  • 3 oz cream cheese
  • 1/4 cup chopped green pepper
  • 3 hard cooked eggs, chopped
  • 1/4 cup salad dressing
  • 2 tbsp green onion, chopped
  • 1/2 medium cucumber, chopped

Instructions
 

  • Peel tomatoes; cut slice from top of each and scoop out centers. Sprinkle with salt; invert to chill.
  • Blend cream cheese with enough cream to soften and line tomato cups with mixture.
  • Combine remaining ingredients and fill tomato cups. Chill.
  • Serve on lettuce with additional salad dressing.
