Egg Salad in Tomato Cups
Ingredients
- 4 medium tomatoes
- 3 oz cream cheese
- 1/4 cup chopped green pepper
- 3 hard cooked eggs, chopped
- 1/4 cup salad dressing
- 2 tbsp green onion, chopped
- 1/2 medium cucumber, chopped
Instructions
- Peel tomatoes; cut slice from top of each and scoop out centers. Sprinkle with salt; invert to chill.
- Blend cream cheese with enough cream to soften and line tomato cups with mixture.
- Combine remaining ingredients and fill tomato cups. Chill.
- Serve on lettuce with additional salad dressing.
