Egg Salad in Tomato Cups
Ingredients
4 medium tomatoes
3 oz cream cheese
¼ cup chopped green pepper
3 hard cooked eggs, chopped
¼ cup salad dressing
2 tbsp green onion, chopped
½ medium cucumber, chopped

Step by Step Instructions

Peel tomatoes; cut slice from top of each and scoop out centers. Sprinkle with salt; invert to chill.

Blend cream cheese with enough cream to soften and line tomato cups with mixture.

Combine remaining ingredients and fill tomato cups. Chill.

Serve on lettuce with additional salad dressing.
