Ingredients

 2 tbsp olive oil
 1 ½ cups salt pork, cut into lardons
 ½ tsp cumin, ground
 1 onion, diced
 ½ tsp coriander, ground
 3 celery ribs, diced
 3 carrots, diced
 3 garlic cloves, minced
 ½ tsp black pepper, ground
 2 qts chicken stock
 1 lb dahl/red lentils

Step by Step Instructions

Set your pressure cooker to the saute/brown/sear function, add olive oil and salt pork lardons. Cook until browned. Add cumin and coriander to bloom in the hot fat.

Add onion, celery, and carrot. Cook until softened. Add garlic and black pepper, cook another 30 seconds.

Add chicken stock and lentils, stir well. Secure the lid on your pressure cooker, set your cooker to soup/stew and high pressure. Cook for 20 minutes once cooker comes to full pressure.

Once cooking finishes, perform a quick pressure release. Stir to break up the lentils and thicken the soup.
