Pressure Cooker Lentil Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 1/2 cup salt pork, cut into lardons
  • 1/2 tsp cumin, ground
  • 1 onion, diced
  • 1/2 tsp coriander, ground
  • 3 celery ribs, diced
  • 3 carrots, diced
  • 3 garlic cloves, minced
  • 1/2 tsp black pepper, ground
  • 2 qt chicken stock
  • 1 lb dahl/red lentils

Instructions
 

  • Set your pressure cooker to the saute/brown/sear function, add olive oil and salt pork lardons. Cook until browned. Add cumin and coriander to bloom in the hot fat.
  • Add onion, celery, and carrot. Cook until softened. Add garlic and black pepper, cook another 30 seconds.
  • Add chicken stock and lentils, stir well. Secure the lid on your pressure cooker, set your cooker to soup/stew and high pressure. Cook for 20 minutes once cooker comes to full pressure.
  • Once cooking finishes, perform a quick pressure release. Stir to break up the lentils and thicken the soup.
